Berry Gratin Recipe

Ingredients
- 1 pt strawberries, rinsed, hulled, sliced
- 1 pt blueberries, rinsed and picked over
- 2 1/2 pt basket raspberries
- 5 lg. Egg yolks
- 1/2 cup orange juice
- 1/2 cup sugar substitute blend
- 1/2 cup sliced almonds
Directions
- Set rack in upper level of oven and preheat to 400. Toss berries together in large bowl without breaking them up. Place in the prepared gratin dish. Whisk together yolks, sugar substitute blend and juice in a heatproof bowl and place over small pan of simmering water. Whisk until slightly thick. Off heat, continue whisking for 1 min.
- Evenly cover berries with Sabayon. Place in buttered 1 1/2 qt gratin dish. Sprinkle with almonds. Bake 5 to 10 min until well-colored. Serve immediately.
